Shodoshima Soy Sauce The origins of soy sauce production on Shodoshima Island are unrecorded, but it is widely believed to date back to the Bunroku era (1592–1595). Since ancient times, Shodoshima had a thriving salt industry, and by the Genroku period, its production ranked second only to Ako. However, by the late Edo period, salt production had become excessive throughout the Seto Inland Sea region, prompting a shift toward soy sauce production, which effectively utilized salt as a primary ingredient. Shodoshima’s strategic coastal location, where maritime transportation was central, made it easy to source soybeans and wheat and to export products. Additionally, the island’s warm and relatively dry climate proved ideal for soy sauce brewing. These factors collectively contributed to the growth and prosperity of the soy sauce industry on Shodoshima.
